If you're getting severely out-braked by the AI, you probably don't have your bike setup properly. Even in a real GP race, if Pedrosa decided to go 20mph slower into a corner while on the racing line there's a good chance a following rider would hit him. you have to use proper racing lines and speed through the corners.
